It is said that Montana is the wheat state. However, it’s becoming more apparent that lots of people can no longer eat wheat products due to an intolerance of the gluten protein found in most grains. In a study done at the University of Chicago, it was found that Celiac Disease, or gluten intolerance, affects at least 3 million Americans in the US. In a state as large as Montana, with a population of 974, 989, that means that over 7,000 people suffer from gluten intolerance. The numbers are much less staggering in the city of Missoula, with only 500 of its 66,788 population having to worry.
Ui-Cha! Pho does not serve completely gluten-free dishes because we share a common kitchen with several other restaurants. However, a number of Ui-Cha! menu items are gluten-free, using only rice products.
Customers can now enjoy pho bowls with rice noodles, meat plates with choices of white rice, and spring rolls wrapped in rice paper.
Ui-Cha! is definitely a healthier alternative. All dishes include a healthy source of protein (chicken, beef, pork, or tofu) and fresh vegetables. Even our pork rolls are only lightly fried before being baked in a conventional oven, cutting back on the oil used for most fried foods. It’s been so nice seeing people at the Food Court getting excited about Ui-Cha! Being able to serve some gluten-free dishes is just one more reason to get hyped!
